When the weekend rolls around I always want to make something sweet. Mostly because I have the time as I’m off. 😉 This weekend I wanted to use up some food that was laying around in my press for awhile. I had to think a little bit of how I could use certain foods together. I had the majority of the ingredients for this recipe already, chickpeas, oats, vanilla, pb2 and water of course. The only thing I had to run out and get was some fresh medjool dates from the local market and a nice dark chocolate for the chocolate chips and I was ready to make some delicious cookie dough! I just wish I had a better blender or food processor though so I could of gotten a smoother texture. My little blender just wasn’t able to do that for me sadly. I was left with a mix that wasn’t as smooth as I would of liked but it still tasted great.
Oh and it’s all made from whole plant based foods!
1/2 Cup Medjool Dates
2 Tbs Oats
3/4 Cup rinsed Chickpeas
2 Tbs Peanut Powder (PB2)
2 Tbs Cacao Nibs/ dark chocolate chopped up
2 Tsp Vanilla Extract
4 Tbs Water
Pop everything into a food processor and blend until you get a texture you like.
