When the weekend rolls around I always want to make something sweet. Mostly because I have the time as I’m off. 😉 This weekend I wanted to use up some food that was laying around in my press for awhile. I had to think a little bit of how I could use certain foods together. I had the majority of the ingredients for this recipe already, chickpeas, oats, vanilla, pb2 and water of course. The only thing I had to run out and get was some fresh medjool dates from the local market and a nice dark chocolate for the chocolate chips and I was ready to make some delicious cookie dough! I just wish I had a better blender or food processor though so I could of gotten a smoother texture. My little blender just wasn’t able to do that for me sadly. All week I had been craving tortilla chips, literally every night. So when the weekend came along I decided to hop into the kitchen and make some from scratch to kill the craving once and for all. The tortilla chips were so simple to make, they were ready in 15 minutes. To go with the chips I needed to make some sort of dip. I made this tasty treat on Sunday for a mid-day snack as I was craving something sweet but carby after my morning cycle to Sixmilebridge from Limerick. I just got a new road bike that week so I was eager to get out on the road at the weekend for a good long cycle. Needless to say I was HUNGRY when I got home. This chocolatey mess really hit the spot. I’m a bit inpatient when it comes to food, especially when I’m hungry so I couldn’t wait for the pancakes to cool hence why the nice-cream is melting everywhere in the picture. But hey the important thing is how it tastes, not looks right? 🙂

I love weekends, it gives me a chance to try out some new recipes I’ve been thinking about during the week.
I think you’re going to love these chocolate peanut butter bars. They’re a great healthy easy to make sweet treat that you can enjoy as a snack or as a post workout treat to keep you ticking over to a main meal. In total it took me about 10 minutes to throw together the mix so they take little or no effort to make at all. They’re a great alternative to a chocolate bar when your sweet craving hits.
