Plant Recipe: Peanut Chocolate Chip Cookies


I made these when I got bored last night, they were super easy to make and I just happened to have all the ingredients lying around in my kitchen. They only take 15 minutes of prep time and 15 minutes in the oven. As there is very little sugar ingredients in them, they are not overly sweet like regular cookies. They have a more neutral biscuit taste. They are not too nutty either considering the amount of nut based ingredients I used. They consistency came out perfectly, once they cooled they don’t go too crispy or hard which is what I liked most about them. They were a slightly crisp on the outside and soft on the inside.

Makes around 9 average sized cookies.

P.S the dark bits in the picture are chocolate chips, not burnt bits 😉 just in case you we’re thinking that..

Plant recipe: Spicy Breaded Tofu Strips


These crispy Tofu Strips with some Sweet chilli dipping sauce are a perfect snack for any occasion. They also make a great addition to a salad. Or you could add them to a wrap with greens or crunchy lettuce and veggies.

I often get the question as a new vegan, but.. where do you get your protein from? Tofu is a good source of protein and contains all eight essential amino acids. It is also an excellent source of iron and calcium and the minerals manganese, selenium and phosphorous. In addition, tofu is a good source of magnesium, copper, zinc and vitamin B1.

Plant recipe: 5 Minute Cookie Dough Recipe

IMAG0521When the weekend rolls around I always want to make something sweet. Mostly because I have the time as I’m off. 😉 This weekend I wanted to use up some food that was laying around in my press for awhile. I had to think a little bit of how I could use certain foods together. I had the majority of the ingredients for this  recipe already, chickpeas, oats, vanilla, pb2 and water of course. The only thing I had to run out and get was some fresh medjool dates from the local market and a nice dark chocolate for the chocolate chips and I was ready to make some delicious cookie dough! I just wish I had a better blender or food processor though so I could of gotten a smoother texture. My little blender just wasn’t able  to do that for me sadly. I was left with a mix that wasn’t as smooth as I would of liked but it still tasted great.  Continue reading

Plant recipe: Low Fat Sweet Chilli Hummus & Tortilla chips


All week I had been craving tortilla chips, literally every night. So when the weekend came along I decided to hop into the kitchen and make some from scratch to kill the craving once and for all. The tortilla chips were so simple to make, they were ready in 15 minutes.  To go with the chips I needed to make some sort of dip. Plant recipe: No Bake Chocolate Peanut Butter Bars

I love weekends, it gives me a chance to try out some new recipes I’ve been thinking about during the week.

I think you’re going to love these chocolate peanut butter bars. They’re a great healthy easy to make sweet treat that you can enjoy as a snack or as a post workout treat to keep you ticking over to a main meal. In total it took me about 10 minutes to throw together the mix so they take little or no effort to make at all. They’re a great alternative to a chocolate bar when your sweet craving hits.
